Week 1
There are thousands of varieties of vegetables and fruits. Since I realize I am an example to my son I have decided to challenge myself to try new vegetables or fruit a week. First up is eggplant. I have tried the tiniest amount in a spread on a sandwich I ordered once, but it was no where near enough to determine if I like it. I read somewhere that eggplants are at there best during the Jan-July months. I might need to try this again in a month.
I decided to try a battered and breaded version. I had sliced my eggplant not so nicely. I am happy not to be graded since I do not know how to slice. I had sliced half and tried the salted and put in water method and then other half is layered with some paper towels and salted.
I grabbed two bowls one for eggs beated with a fork and the other with some bread crumbs italian blend.

A random selection were coated and thrown in the pan while the rest were breaded and thrown in the oven. The oven was set at 375 degrees and they were in for about 20 minutes or until we felt they were done. After trying a slice raw I was not expecting it to be kind of like a unsweetened apple. I could be wrong but it is what it was like for me. Enzo loved it raw and breaded. I know he eats almost anything right now but this is definitely simple enough to try again.
I would say Eggplant was Enzo approved.
